I'll try to tell you, through the recipes, the best known Abruzzo folk and rural cuisine traditions. The recipes taught to us by our grandmothers and our mothers, sometimes revised, and adapted for my family and to my personal taste.
This way I created many personal recipes too.
The characteristics of the recipes are the simplicity of the ingredients, using the typical products of Abruzzo, and the easy making.
I want to present you my recipes in order to let you meet the tastes and the colors of my land, sweet and essential at the same time, easy but tasty, beautiful and unique, just as beautiful and unique is the territory, with its ever green forest trails, that we can follow, across prairies and hills of flowers, in spring and the magic of the Abruzzo's high mountains.
HER MAJESTY, THE QUEEN
The hypothesis on the birth of the recipe would be that it had been invented by the Abruzzo coal burners. The black pepper not only adds flavor to the recipe but represents the coal residues with which the dish was spoiled during the natural gesture of consuming it with the hands.
This meal was prepared, by the charcoal burners, the day before going to the woods, in the Abruzzo mountains, where they spent their time working the woods to obtain coal.
The Carbonara is considered an evolution of the cheese and egg dish "cace e ove" so-called in the Abruzzo dialect. Over time, other easily available and preserved ingredients have been added to the recipe (pigs cheek, bacon, pepper, and pecorino).
